The Story of Skinny Biscuits

Skinny biscuits are the most requested breakfast item in my family. They were everyone’s favorite. They are sweet, warm, chewy, and filled with so many memories! My earliest memory of them was when I couldn’t have been any older than 5 or 6. My grandparents would always take my cousins and I camping. That was our favorite pastime, second to breakfast of course. We’d wake up early in the morning, around 7 am or so, to the sweet smell of grandma’s skinny biscuits bubbling on the griddle. There was no need for an alarm, for the delicious smell alone lifted us up and out of our beds and to the table. We would eat them so fast that I don’t ever remember her plating them. As soon as they were finished, they were in one of our mouths.


These little tasty pancake looking biscuits made life perfect. Grandpa loved eating them with butter and homemade blackberry jam. My dad loves adding peanut butter to them. We all have our own unique way of making them a little more perfect.
This recipe is extremely simple and has been a small family secret for several years. However, I feel that I should share it with the world like my grandmother shared it with us. Not only is this recipe the easiest breakfast item you could ever make, it’s also zero waste!


This recipe calls for:

  • milk – enough to make the batter like pancake batter
  • 1 cup flour
  • 1 tsp baking powder
  • sugar – a little less than 1/2 cup

 To make the skinny biscuits, just mix all of the dry ingredients together along with enough milk to make it close to pancake batter.

Once everything is mixed to together, pour onto a hot griddle into teeny tiny pancakes.

Once there are several bubbles forming on top, flip. Once cooled, serve them with butter and homemade jam or whatever topping you desire.
